I managed to stick to it.

It is very stressful in my household with my father-n-law in the hospital and recovering from heart surgery. I managed yesterday to keep on my diet plan. I am just going to take it one day at a time.
The Good Lord has my back and everything is under his control. My father-n-law is improving another blessing to be thankful for.

My blood sugars are crazy

I have a terrible breakout of sores on my body, It is because of my sugars. My sugars have been over 300 here lately. My daughter who is working on becoming a nurse, said it isn't uncommon for that to happen. I am trying to get it back under control. I know, I need to take better care of myself

Well, I gained but I am back on track. I weighed 269, I thought I gained 9 but it was only 7 so that is a really good thing

My Father-n-law had open heart surgery and I gained 9 pds

My father-n-law Willis Crosby, just had open heart surgery, It happened so quick too. He went to the emergency room for agina and ended up having open heart surgery. He has had a few complications, he had some respiratory problems, but he is out of the woods now. I am so thankful that he is making a full recovery. I gained 9 pds, I am not a person that handles stress well. My hubby ended up going to the Dr. when his dad got sick, he got sick, the doctor is going to run a bunch of test, for gall bladder and a ulcer. I pray that he will be fine, last thing we need is a sick hubby bubby. Well, I am going to determinedly stick to my diet, since my father-n-law is out of the woods. I plan on writing in my blog what I am eating so I might be more aware of my carbs.

I didn't gain but I didn't lose either.

What can you say about that? Well, I guess if I didn't go up that is a good thing. I kinda overendulged a little but it didn't hurt me thank the Good Lord. I walked a little further this morning to make up for my overendulgence. I go to my doctor friday, hoping for a little good news, this time. I think she will be surprised at what I have achieved. I will be honest, there have been times that I used asthma as the excuse not to exercise, last office visit she said if I go easy and do my inhaler 30 mins before I walk and have it handy as I walked, I would be okay, also start small and gradually increase there is no reason for me not to exercise. I guess that was my favorite excuse, not to exercise, asthma, but I now know, I can if I do it in a responsible and safe manner. I will be honest, I am starting to like it, the first few days, I was sore, that is getting better, and I live in the country, so I am enjoying some of the nature as I walk. I am only walking about 1/4 of a mile, but at least I am starting. I am learning a lot from some of the people on the atkins forum, they are so informative and really helpful too. I am so glad I started this.

I am learning so much

Today was a great day, My beloved hubby, made me a steak on the grill. I had mashed cauliflower with sharp cheddar, and bacon bits, along with a nice salad, life is good. I just read some of the post on the forum, I am learning a lot from folks. I want to be able to do things again, I will be honest, sometimes I allowed myself to feel sorry for myself. The worst part of all this is I have dealt with asthma my whole life, seen the inside of an emergency room more times than I care to admit. When I was a younger person, I bounced back much quicker and took it a little more in stride, I realize, I will never get rid of asthma, but it doesn't have to have me. I am a little worried about the stress test, I had for my heart, I am hoping, I dodge that bullet, I will know the result friday, please let it be good. I don't want to complain about my problems, I just want to work with what the good lord gave me, and live life. I want to keep everything in a good prepective and be happy.

Smothered pork chops a southern thang

Smothered Pork Chops


Ingredients:
1 Tablespoon arrowroot (or 1/2 Tablespoon not/Starch)
1 can (14 1/2 oz.) Beef Broth
1/8 teaspoon pepper
2 Tablespoons butter (I use smart balance)
6 Pork Chops, 1/2" thick (center cut or boneless)
1 medium onion, sliced

Mix arrowroot (or not/Starch), broth and pepper. Melt butter in skillet and saute chops, cooking until browned. Remove chops and set aside. Lower skillet heat a bit and add onion (I used smart balance) and cook until tender-crisp. Add broth mixture. Cook until mixture boils and thickens, stirring. Return chops to skillet. Cover and cook over low heat 5 minuntes or until done.

Serves 6. 2 grams per serving.

Cheesy Chicken Casserole


Ingredients:

6 chicken breast halves with skin and bone
1 10-ounce package frozen chopped broccoli
1 cup cream
1 cup half-n-half mixed with water (1/2 of each)
16 ounces mascarpone cheese
1 teaspoon salt
3/4 teaspoon garlic powder
1 1/2 cups grated Parmesan, divided
Early in day, simmer chicken in water to cover until tender, adding 1 small chopped onion, 1 teaspoon salt, 1 bay leaf, 2 garlic cloves and 3 celery tops to water. Remove chicken; cool. Discard skin and bones; slice chicken thinly; cover and refrigerate. About 1 hour before serving, cook and drain broccoli as package directs; arrange in bottom of greased 2-quart casserole.

Preheat oven to 350°F.
In double boiler, over hot, not boiling water, blend cream, half-n-half mixture, mascarpone, salt and garlic powder until smooth and hot; stir in 3/4 cup Parmesan. Pour 1 cup cream sauce over broccoli; top with chicken in even layer. Cover chicken with rest of sauce; sprinkle with 1/4 cup Parmesan. Bake at 350° 25 to 30 minutes or until piping hot. Let stand 10 minutes before serving. Pass remaining Parmesan at table.

Happy Mother's day

I am having a great Mom's day. I got my cards and my family is preparing me a nice low carb meal with steaks, mashed cauliflower and bacon bits, a nice tossed green salad. I am also having a flourless chocolate cake, so for me today is wonderful as well as low-fat and low carb. I hope everyone is doing as good as I am. I even lost 1 pd so today is a good day.

Here is a diet friendly low carb dessert

Flourless Chocolate Cake


Flourless Chocolate Cake Recipe




7 1/4-ounces dark chocolate (65% to 70% cocoa), at room
temperature & chopped into pieces
1/2 cup
butter, cut into small cubes
6 large eggs at room temp and separated.

special note: if you are on atkins don't do the 1/3 cup of sugar and splenda, substitute 1/2 cup of splenda
 1/3 cup of sugar
 1/3 cup of splenda
1 teaspoon pure vanilla
extract
*
1 teaspoon powdered (confectioners)
sugar
, for garnish
Preparation:




Preheat oven to 375 degrees F.


In a large metal bowl set over a pan of hot, not simmering, water
(bottom of the bowl should not touch the water), combine the chocolate and butter and let stand, stirring occasionally, until smooth and melted.


In a medium-size bowl, combine
the 6 egg yolks, sugar, and Splenda. Add the melted chocolate/butter mixture and
vanilla extract and stir to combine. Important be sure to add the beaten egg to chocolate mixture and not the chocolate to the eggs.
In a large bowl, whip the 6 egg
whites until firm. Add 1/3 of the whites to the chocolate mixture and stir to
lighten the batter. Gently fold in the remaining egg whites
until just blended and no streaks
remain. Finish by using a rubber spatula to ensure that the heavier mixture at
the bottom is incorporated.

Scrape the batter into a non-stick 10"
springform pan and smooth top with the spatula.

monday I started my diet and I weighed 272. I weighed this morning 262, 10 pds gone, I just want to say Woo Hoo!

I am on the new atkins diet

I am amazed at how well this diet is working for me and I lost 10 pds too. I am counting carbs and eating low fat. I am a diabetic and my sugars are doing well, my sugar was 90 this morning never had it that low.

I am doing this blog to help me loss weight and stay motivated

I don't know if anyone will read this blog, but I am writing down my thoughts and feeling about this journey that I am beginning. I guess for a long time, I have hidden myself and fat was my refuge for a long time. I am now tired of hiding from myself and I am ready to face myself, the good, bad and the ugly

BAKED PECAN CHICKEN



2 1/2 ounces pecan meal or very finely ground
pecans, 3/4 cup
3/4 teaspoon salt
1 egg white
2 boneless chicken
breasts
Mix the pecan meal and salt on a dinner plate. In a cereal bowl, beat the egg
whites with a fork until foamy. Dip the chicken in the egg white on both sides
then coat them with pecan meal. Place on a foil-lined baking sheet that has been
sprayed with cooking spray. Bake at 400ยบ 15-20 minutes or until the chicken is
done.
Makes 2 servings
Can be frozen
Per Serving: 377 Calories; 26g Fat; 32g Protein; 5g Carbohydrate; 3g
Dietary Fiber; 2g Net Carbs




I have been on my diet for a week now

I started on monday, and I weighed this morning I went from 272 to 262 . I lost 10 pds so far and that is so great.
